macaroni with roasted chicken

no..it’s not a new menu from ayamas or KR or nandos. but it is my menu for sunday bfast. no! i’m not trying to impress ma’am. she’s not too keen on dishes other than rice. but i made it specially as lunch pack for hubby. he had to do locum in his bro’s clinic in bagan serai, an hour n a half drive from ipoh, from 9am to 9pm. usually, he would have bfast at 7.30am b4 he goes out and eats dinner at 10.30pm when he reaches home and eats nothing in between.  u see, he only likes to eat homecooked meals, and really cant be bothered to find food so, the next option is just to be on a diet! so, being the good wife that i am…i offered to pack lunch for him…

so here is the recipe for Fried Macaroni – Kak Dah’s Style

Ingredients:

macaroni (elbows) – boiled with a pinch of salt and butter or olive oil for 10 mins and dried

chilli paste (blend together) – dried chillis, onions, garlics, gingers

minced chicken or meat

spagetti bolognaise herb - u can find it in small bottles at the dried food section in tesco or jusco 

onions, garlics, gingers (chopped) 

tomatoes – diced

capsicums – cut into small pieces

button mushrooms (canned) - cut into half

celeries or other veges of ur choice

sunflower or olive oil (to watch the cholesterol)

egg

salt to taste

How-To:

1. chop and blend the blend ingredients to make chilli paste. dun forget to add in small amount of water

2. heat a fair amount of sunflower oil in the non-stick frying pan

3. when the oil is well-heated, tumis the chopped onions, garlics and li’l bit of ginger

4. leave ‘em to fry until u can smell the fragrant

5. pour in the minced chicken and mix well

6. add in a fair amount of spagetti bolognaise herb into the pan and mix well with the minced chicken

7. continue frying until the chicken is cooked but careful not until it turns brown

8. by this time, if u can’t smell the herb, then i advise that u add in another pinch of the herb

9. pour in the blended chilli paste into the pan and continue to mix it well with the chicken

10. continue frying. the chilli must be well-cooked if u wanna make sure it is safe to be consumed :)

11.  while cooking the chilli, add in the diced tomatoes. the tomatoes must be cooked until it is becomes really soft . this is to ensure we get the sour taste of the tomatoes

12. while cooking the sauce, continue to add in mushroom, capsicum, celery and other veges

13. when everything especially the chilli is cooked, add in some salt to taste

14. before u pour in the macaroni, add in the egg and stir until it mix well with the sauce

15. finally, pour in the macaroni and mix everything together

as for the roasted chicken, steam the chicken with blended ginger paste for half an hour. dry the chicken and collect the chicken stock for other usage. then, marinate the chicken with black pepper sauce for one whole nite. put the chicken into microwave and grill for 15 mins, turn the chicken, then grill for another 10-15 mins.

serve the macaroni with roasted chicken and some salad and voila! bon apetit!
